Newbie: 4K LOTR, what to rip?

Hello, I just got the 4K version of Lord of the Rings (full trilogy, theatrical and extended, Amazon Prime Days special), have a working Blu-Ray player supported by makeMKV (no problems there) but what I'm struggling a little bit is what to rip from the disk, so any guidance will be appreciated. My end goal is to have all the trilogy (extended editions) in 4K MKV in a NAS playable by Infuse from a 4K AppleTV.

Example:

the second disk from Fellowship of the Ring (extended version) shows the following list of files in makeMKV (before ripping, 9 files)

and after ripping, I see the following (8 files)

Besides the fact that I'm seeing 1 less file, what's puzzling me is that there're 2 files of 82.05GB size, and that if I open them, they both seem to have the same content (including all audio languages and subtitles).

1 - is one of these files more preferable than the other? There might be some features available in one and not on the other one?
2 - If so, how can I find what's available in each one?
3 - Why is makeMKV showing 2 files at 74.96GB but after ripping it, the file size is 82.05GB?

Probably one version has chapter markers and one does not. I prefer the chapter markers, but to each their own. :)

I'm facing the same issue: one of the two big files 80GB~ is the correct one, but which? Both have chapters and bnoth have German and English sound (same format).
Which ho choose?

99 times out of 100 the title with the label ("SEG FPL_MainFeature" in this case) will be the correct one to rip, the other one won't have chapters. You can also sometimes get discs with two main titles with chapters and in that case expand the title and check the languages, one might have English and Japanese audio/subtitle tracks, while the other has English and European language tracks.

You might also get multiple similar titles when there's different cuts for a film.

The first line in your first image is just the disc title, it's not a file.
This disc contains playlists 803, 804 and 805 which are completely identical. They all refer to a single stream (segment): 73.
MakeMKV offers to rip one of the playlists (most likely 803). That is your first big file in the first picture.
Additionally MakeMKV offers to rip the stream file 73 directly (without using a playlist). That is your second big file in the first picture.
The resulting files will differ in the fact that only the file ripped from the playlist will contain chapter markers. There won't be differences in audio or video data as the playlists don't cut away any part of the stream file on this disc.
The file size changes during ripping as blu rays and mkv store data in different ways and the file size will increase when you let MakeMKV create separate audio tracks with core data of the original audio tracks (in addition to extracting the original audio tracks too).
You should double check if both your mkv files really have chapters embedded as this is not expected for one of this two files.
You can get a bit more information about the files and possible differences if you look at the info box in the MakeMKV GUI (right half of the ripping window).
