I ripped a US TV show box set recently and the audio language defaulted to German. During playback via Plex I tried to change the audio but German was the only language listed.
I tried ripping again via MakeMKV, this time selecting the arrow next to the episode (A1 etc) and deselecting all audio tracks except English. It still ripped in German.
Why might this be?

Do you have a 'preferred language' set on the language tab of MakeMKV's preferences? I leave mine set to 'none'.

It is possible that the meta data that describes the language on the disc is incorrect. For example, I've seen tracks labeled as Japanese when they're really English. I've seen that occasionally.
I assume you've played the DVD to verify that there really is an English audio track on it?
You could try making a decrypted backup of the disc and then using MKVToolNix to create .mkv files from the backup. On the first screen of MakeMKV, click the icon of the yellow folder with the green arrow. Make sure 'decrypt' is checked on the next screen. For DVDs, the backup will produce a .iso file, which I'm pretty sure MKVToolNix will be able to interpret. (I don't have a DVD handy to verify however.)

Either do as dcoke22 wrote and make a backup first, or select all audio tracks before ripping to MKV.
You can later remux the MKV with MKVToolNix to get rid of the unwanted audio tracks.
