Hey I recently bought MakeMKV and thought that would fix the issue. But it seems that I am only able to convert a max of 5 GB of a DVD and other DVDs have often been over the 5 GB limit I seem to be having.

MakeMKV works with much larger disks than DVD. UHD can reach 100GB.
What you MIGHT be running into is a limitation on the drive you're writing to. FAT32-formatted drives won't accept files larger than 4GB, even if they have more space available.

Yeah that wouldn't be the issue as other dvds are over the 5 gb limit I'm experiencing, is there a setting I can get into to maybe see why that is happening?

I cannot say - I've had MakeMKV work just fine with dozens of gigabyte files, and my typical rip has 5 to 6 GB episodes.
Is it not letting you to select files to rip, or stopping the rip at a certain point? Going past 4.7GB on a DVD means you're changing layers, so it could be an issue with that.

I've used Handbrake for this series. But its weird as it works for any other dvd rip. I guess its just a one time fluke.
