What is the process for ripping discs with a newer AACS version error?

MakeMKV should've produced a dump (.tgz file) from that disc. Email it to svq@makemkv.com. Eventually, a key will be produced and when you try the disc again in a few days MakeMKV will download the necessary key.

Additionally, you can try the public keyDB. The first post in the Public KeyDB Disc Submissions thread has instructions on how to use the keyDB with MakeMKV. It might already have a key for your disc. If it doesn't (and you don't have Pioneer drive) you can also submit the dump for inclusion in the keyDB.
