Rip the Bluray including All English Subtitles.
Check the MKV with 'MediaInfo', from within MKVToolnix, which shows how many Elements the Subtitles contain.
Set the appropriate Subtitle Track as ...

That is Good to know, so I will be able to Rip them as with any UK Disks.

It will also allow me to get hold of other TV Shows on Bluray that I am having difficulty getting hold of in the UK.

Just curious but why not just Set the MKV Flags for the Subtitles in MakeMKV?

Select the Subtitle on the Left, Select MKV Flags from the Drop Down Menu at the Top and enter D for Default or F for Forced, it has worked here.
