CLI and Profile to transcode all data without exception

I'm having difficulty creating a cli command/profile that can transcode an entire bluray/dvd including all video tracks, audio tracks, subtitles and supplements, including all alternate angles.

I've tried a lot of combinations in app_DefaultSelectionString. I thought a simple +all would have got me there, but no luck. Adding lossless audio seems to disable other audio streams as well.

If anyone has any pointers, I'd appreciate it. I basically want every shred of information that can be put into an mkv so I can throw the disc in storage and audit the rip later.
