Possible to run two instance of MakeMKV?

I recently acquired a second UHD drive and was wondering if it would be possible to run two instances of MakeMKV on the same system, each using its own drive. When trying it, any disk operation on the second drive seems to stop any active activity on the first drive. Is there any trick to get this working or it it only possible to run a single instance?

In case it matters, I'm running on Windows.

On the Preferences > 'IO" tab, check 'Ask for single drive mode' & restart MakeMKV. It will now ask which drive to assign to each instance of the app.
