Is there something within MakeMKV that I need to enable that will rip the movie with HDR? I am only noticing now that when viewed on my PC (non-HDR) that the colors are not muted. Doesn't that mean the original file does not include the HDR?
Edit: I ripped my copy of John Wick (the first one) and I see this in the MediaInfo.

MakeMKV has correctly ripped the HDR information off the disc (i don't even think you could prevent that from happening), and whatever program you are using to play back your new file is correctly tonemapping the HDR color information so it doesn't look terrible on your non-HDR display. i think most playback software correctly accounts for HDR color on SDR displays now.
