Subtitles on every time a mkv is played

I love this software, it's fantastic. The only issue I am having is that every time I rip a dvd and wish to include subtitles, they are always on by default when playing the mkv with vlc media player or xbmc. This can be disabled by turning off subtitles in the menu, but it becomes an annoyance when every file played requires the subtitles to be disabled. Besides not including subtitles or disabling them for every file, is there a fix for this issue?

There should be an option in vlc and xbmc to disable subtitles by default, and only turn them on for certain languages.

I searched in both xbmc and vlc media player and neither had a simple way to turn on/off subtitles for the problem I was having. Very happy to report that mkvmerge is exactly what I needed. It resolved my problem completely! Thank you for your help and suggestions!
