MakeMKV v1.18.1 linux(x64-release) stuck when launched

I built it from source following the instructions, I even updated the ffmpeg by following the instructions.
it launches but it's stuck at Scanning CD-ROM devices and everything is greyed out but Quit, Clear Log, and About and Purchase
EDIT: only happens when there's a disk in the drive

I have just had a very similar experience. I didn't build from scratch, I installed 1.18.1 from ppa:heyarje/makemkv-beta.

I have two optical drives on my Mint 22.1 desktop and I have found a bizarre workaround:-
I have one LG Blu-ray device and a DVD drive (and access to my partner's external USB connectable Samsung Blu-ray drive).

My makeMKV stalls with identical logs to yours when it is started and there is already a disc in the LG/blu-ray drive, same if I start with an empty set of drives, then insert a b.r. disk into the LG drive.

I can rip a DVD in the DVD drive. I can rip a blu-ray in the borrowed USB-connected blu-ray drive.

What I discovered, which seems very weird, is that if I launch makeMKV and first spin-up a DVD in the DVD drive, then insert the blue-ray which I want to rip into the LG drive.... it will recognise the disk in the LG drive and then continue to function normally.
This may not help you if you are stuck with one drive - sorry, but maybe you have an old drive lying around or a USB drive hanging around (blue-ray or not). Hopefully this might be a clue as to the nature of the problem.

Nothing more happens. I close the app. I notice in System Manager that there is a thread railed at 100% for 'makemkvcon', so I kill that or else they build up over retries.

Next I try my sequence of starting the app with empty drives, inserting a DVD into the DVD drive, letting the app detect the disc, then inserting the blu-ray into the blu-ray drive, then I switch to the blue-ray drive. MakeMKV shows the spinning disk graphic, but then quickly recognises the disk in the drive. It seems to have got past the previous sticking-point:-
