Trying to Rip from Blu-ray to Mp4 with Japanese Audio and English Subtitles

Hello, I'm trying to figure out how to rip/convert my Blu-ray disc but I can't find any options to change the audio track or add in the subtitles with it. I can see the options on the DVD version but if possible I'd prefer the Blu-ray due to quality differences. Is there any way for me to rip it using the Japanese audio track and English subtitles? I can see the Audio track as Track 2 and Subtitles as Track 1 while watching it normally.

Rip with MakeMKV.

Process video with, say, handbrake to convert the MKV file to an MP4, with the selection of audio and subtitles you want.
