Multiple makemkvcon instances
Are there any caveats to shelling off multiple instances of makemkvcon when passing the "mkv" argument as long as each instance is access a different disc and the output files are different?

I have not tested this as "just copies of makemkvcon", but running multiple copies of MakeMKV, each assigned to deal with a separate drive, works find. I've run up to three at a time on one machine, and regularly operate two.
Nothing special required, but, to keep the instances from interfering with each other during disk loads, I set MakeMKV to "Single drive mode" (Preferences->IO), so that it asks about single-drive mode on start-up when it detects more than one drive available.
The above is for the MakeMKV user interface - do not know if it is required for the disk interface itself, since that operates as a separate task per active read.
