Presumably, if you have your computer show file extensions, the files in the second picture will be .mkv files.
VLC is a handy utility for playing them on your computer.
MediaInfo is a handy utility for looking at the details of .mkv files.
I guess that the disc in question is Man of the Moment (1955)
If you turn on 'Expert mode' in MakeMKV's preferences on the General Tab, you get some extra options in the GUI. Most importantly, when you highlight a title, you'll be able to fill in the title. If you click on the arrow, you can un-include any audio tracks or subtitle tracks that you don't need. You can also name audio and subtitle tracks.
Changing names with Expert mode enabled
If you do that stuff, then rip, the output will be much more sensibly named. Also, the metadata in the file will have all the names you've included. MediaInfo will show you these details.
