IMO it is better to convert any itunes/appletv profile 5 DV to profile 8 .

I also found another very niche reason but applicable to me - if you use Phillips Hue lights and Hue Sync with your TV (I use Hue Essentials on my Shield in lieu of an official Sync Box) - it works with unprotected DV content like through Plex but it samples just the base layer without any of the color transformation in the DV metadata so it incorrectly just mimics red and greens for p5 files, for p7 and p8 files with HDR10 base layer, appropriate matching colors are output

that is not how it works, you're just changing the container profile and not the actual RPU metadata profile.
As I said, you can't convert P8/P7 to P5.
