As with most movies, you can ignore the checkboxes for "forced only", since the flag it depends on is rarely used. Even if you select them, you'll get a message at the end of the rip saying they were empty and deleted.
Then you just have to check the correct track. Most use 3, but some use 7.
Or let MakeMKV rip them all, look at the resulting MKV file with VLC to identify the correct track(s), and use mkvtoolnix to remove the ones you don't want.

I've tried multiple tracks (I think 1st, 2nd, and third, and fourth individually) of forced English and full English subtitles but never all at once. I've never used VLC or mkvtoolnix. I only have experience with MakeMKV so far.
