OK, things I learned through this process:
PowerDVD said my display driver wasn't compatible with Blu-Rays...
1) Don't believe windows when it says you have the latest graphics driver installed (OK, I knew that already)
2) Don't believe Intel when they say you have the latest graphics driver installed (I expected better)
3) Don't believe HP when they say you have the latest graphics driver installed. (C'mon, you made this thing)
4) If you find the latest driver, PowerDVD will play Blu-Rays (on my computer)
5) If you're using the latest version of procmon, the filter you want to use looks like this...

UK Blu-ray (non-UHD) playlist order as below, verified with procmon. This was different to the MakeMKV suggested playlist on Mac OS.

The thing is, when I play the movie in a bluray player, the main menu lists 16 scenes and the movie has 17 chapters (I'm guessing the extra mouse clicker chapter is the credits which is not listed as one of the scenes) So, it looks like the file that makemkv lists as the main feature is more correct because it has 17 chapters. Is that right?
I checked side-by-side the two files you mentioned and the difference is in the scene that (I’ll try to keep spoiler-free, just in case) contains a phone call in a restaurant.
The file that MakeMKV shows will cut before the camera pans to show behind the caller.

I agree that 00628.mpls is the correct segment map for the US Retail version. Why is there no music when the starting Lionsgate logo appears however? There's music when I play the Blu-ray, but there is no music when I play the ripped MKV file in PLEX.

OK, I just noticed something. If you just play the Blu-ray disc, the opening Lionsgate logo has music. If you start the movie from the main disc menu however, there is no music with the Lionsgate logo. I guess MakeMKV rips the latter Lionsgate intro.

can someone help direct me to where I can learn how to use this information to get teh file correct on mkv. Knives out is broken up in many titles for some reason. Thanks

When you put the disc in and open MakeMKV you click on the disc on the left side of the page. It should go through some processes and open the disc, which then displays a bunch of files that are all checked on the left. Right click on one and select "unselected all titles" to unchecked them all. Then click on them to find the Source file name, which in this case is 00234.mpls for the rental disc. You can verify that you have the correct one selected by comparing the segment map, which for the rental disc of Knives Out is Segment map: 506,511,519,505,513,510,502,514,507,509,504,516,518,508,515. If all of those segment number are in the right order for yours, you have the correct one. Check mark that one, select the audio and subtitles that you want, and rip away.

I just got the "sweater edition" from Wal-mart. The one with the sweater on the outside sleeve. The correct title for me was 00628.
