How can I make clips from a MKV?

So I was watching a video where the guy takes about ripping his movies and how he also has a collection of favorite parts of movies that he shows off to friends when he wants to demo his system. Has anyone on here done something like that? If so what system do you use? It looked like a really cool idea to have clips that show off 4K or my surround system.

mkvmerge will cut an mkv file into segments. You can split by time stamp, duration, chapter, etc.
