What is the recommended external UHD drive for use with a AIO desktop?

What is the recommended external UHD drive for use with a AIO desktop?

Is it also better to go with an enclosure with a internal drive inside it or external?

The recommendation for "all-in-one" PC desktops is the same as for all-in-one Macs - Internal plus a compatible enclosure. That gives the best flexibility and speed.

Slim USB drives can run in to power problems and generate errors.

In terms of price / performance combination my recommendation is ASUS BW-16D1HT or (only slightly slower) BC-12D2HT coupled with an adapter rather than an enclosure. You can still of course install the drive direct SATA but my tests show very little drop in performance via USB 3.0 and of course its far more flexible.

It's pretty tough these days to find a good enclosure for a 5,25" drive. I also suggest to get an USB3 adapter. Depends on the region what is available. In Europe I suggest the Sharkoon Drive Link Combo U3 V2.
