I’ve run into a small hiccup using Plex to stream 4K movies. Basically, it doesn’t work with 7.1 audio. But it does work with 5.1. And on one of my 4k discs (Avengers Endgame) and possibly others, the only 5.1 English track is for visually impaired.
So can I use MakeMKV to rip lossless video while converting the 7.1 audio to 5.1?
(Yes, I can rip 4K using MakeMKV).

You can use Handbrake to convert it. Rip the MKV with MakeMKV , then use MKVToolNix and extract the audio, convert with handbrake and then use MKVToolNix to splice it back in. There's probably an easier way to do it,but it was what i have installed.

Should work with "EAC3TO" by using the "-down6" option. https://en.wikibooks.org/wiki/Eac3to/How_to_Use
Extract the audiostream with mkvextract (part of MKVToolNIX) from the MKV file, convert it with eac3to and use "MKVToolNIX Gui" to add the new track and deselect (or not) the 7.1 track, shift the tracks in the right position and muxx it to a new mkv file.
