Is there a way you can allow audio extraction from a vob file to MP3

Not with MakeMKV (to the best of my knowledge), but there seem to be any number of options:

You could extract a specific audio stream from an .mkv with mkvtoolnix & convert that to .mp3. The same search results will probably lead to a tool to accomplish that end.

Can be done with an older Java Tool "Project-X" if the DVD is decrypted. Add all VOB files and Demuxx it and the Audio is separted. Other way is MakeMKV to create the mkv file and use "mkvextract" (Part of MKVToolNIX) to extract the audio file. Maybe there are more tools.
