Hello,
When I rip a DVD does MakeMKV offer several file size options to rip to? I've ripped two DVD's and they range anywhere from 6GB to 9GB. These file sizes are to big to even place on standard DVD's which max at 4.7GB
I love this product but am seeking seeking quality and size balance.

No, MakeMKV makes no changes to the video, and there is no effort to even make something you can "burn to a DVD".
If you want to make a copy of a DVD or BD, you will need DVD or BD authoring tools.

I can recommend using the free opensource Handbrake software (just google it) to compress mkv files after ripping with MakeMKV. Works very smooth.
