Hello..
Even after selecting un-selecting all, when opening tracks all the audio and subtitle entries are selected.
It would be nice if you could configure MakeMKV to only select a certain language when a disc is scanned.
For example, I select English in the settings, so afterwards, everytime, only the english audio tracks and english subtitles are selected by default.

If you only want a particular language selected, Preferences->Language, select a Preferred Language. Unless you also change the default selection rule, you will ONLY get audio and subtitle tracks selected if they match that language.
You will have to change the default selection rule to select "types" of audio tracks. You will want to read through the "Advanced MakeMKV usage" forum for more information on that.
The unselect all context menu option generally just unchecks titles.
