I'm new to ripping blu-ray, I recently ripped some matrix blu-rays and the output had 2 similar video files. I checked the audio tracks and subtitles and they just had different languages. The videos should be identical apart from the audio track and subtitle languages right?

The answer is a definite "maybe".
Some disks are authored so that they appear in a particular language. Titles and credits are changed to match.
Disney usually puts 2 or 3 versions of a title on a disk, and they will differ by two segments (titles and credits). Some disks treat the "commentary" version as its own title, swapping out which audio tracks are primary.
And then there is the "theatrical" vs. "director" cut versions, which will include/remove scenes.
