DVD Audio is one step below

So I got MKV maker for blu-rays, but I have DVD's that need love too.
After ripping a few, I noticed a weird thing.
Example: The DVD is Dolby Digital 5.1, the disc plays on my system 5.1 and the cover of the DVD says it's 5.1.
When I select which title to burn and check out the audio formats to select, it's only Dolby stereo.
No option for DD 5.1

Exapmle 2: I have some DD stereo movies, but when I go to burn them, they only give me the option of DD mono.
It seems like all my DVDs want to burn at one step below the actual format on the disc.

Does what I'm saying make any sense?
How do I fix that?

"When I go to burn them ..." with what? MakeMKV doesn't burn DVDs.

When you're ripping a DVD or BD, you can see (and select) which tracks within a title to rip. If you make sure all of them are selected, all of them will end up in the MKV file.

Some programs that read MKV files do not see all audio tracks within them.

Sorry, I mean rip, not burn.
I just save the mvk and dump it on my NAS.

I usually cherry pick the audio formats.
I simply choose the the highest one available to me.
I un-check Spanish, French, etc.
I un-check the subtitles.

What I'm saying is the format on the DVD's (IE: DD Stereo English) is not an option for me to pick.
Why?
It gives me the option of DD Mono English as the highest audio format.
But the DVD has DD Stereo English on it....why is that not an option for me?
It's on the disc.

I wish i could post a photo, it would explain it all in one second to you.

Does that make more sense?

If you play the MKV file in something like VLC from VideoLan.org, what does it show for available audio tracks? While VLC doesn't play EVERY kind of audio, it at least identifies them better than some other programs.

I have VLC and use it as my default media player on my PC.

So I ripped the DVD "Strange Brew"
Played the mkv on VLC and opened up Codec info.

Type: Audio
Codec: A52 Audio (aka AC3) (a52)
Language: English
Channels: Mono
Sample Rate: 48000 Hz
Bitrate: 192 kb/s

It too says Mono, as expected. Since MKV maker made it in mono.
That was the only audio track to select.

So then I put the DVD in my oppo Blu-ray player.
Played it and guess what.
MONO

The disc and the case say DD stereo.
Same thing with the other DVD I was doing.
Mis-marked DVDs I guess.

Lesson to be learned here.
Do not trust the labels on the case or DVD to tell you the audio format on the disc.

That is VERY strange - It's something I've only seen with a few DVDs from normal sources, and usually with OLD films. But those said mono audio on the box... Even Malaysian "recorded from Tokyo TV stations complete with the broadcast watermark" disks are almost always stereo, at least, and advertise as such.
