I got the "Complete Toy Story Collection" box in Blu Ray format for my daughter this xmas. I was able to rip 1 and 2 without issue. However, when I try to rip 3 makemkv doesn't show me the HD audio tracks. According to the package there should be DTS 7.1, DTS 5.1, and Dolby 2.0 for English. But as you can see in thescreen shots it is only showing the 2.0. I haven't gotten far enough for it to create a log file I don't believe. Thanks
I know these can have different SKU #'s. Mine is 8 717418 292584.

My copy of Toy Story 3 only has one Dolby Digital track with the two MA tracks, having two is kind of odd...
The number of chapters are right.
But...
I notice the title of the disc says "Toy Story 3 (disc 2)"
There was a bonus disc included with the set that originally came with Toy Story 3, and I'm pretty sure the Toy Story 3 movie should be on "disc 1" of that set.
My copy is region A,B & C (international), has a single AC-3 track with two MA tracks (5.1 & 7.1) and is labelled "Toy Story 3 (disc 1)". I didn't get a disc 2.

You're looking at the wrong disc.Surprisingly, Toy Story 3's picture-in-picture commentary is relegated to its own disc. Not that I'm complaining. Director Lee Unkrich and producer Darla K. Anderson are still given ample opportunity to dissect each scene as the feature-length film plays on screen, storyboards and concept art appear throughout, and the whole of the experience is as informative, detailed, anecdotal and engaging as one might hope. It may not be crammed onto the first disc, but it's an invaluable addition to the set that every filmfan and Pixar junkie should set aside time to watch.

Assuming you want English credits it's always 0800.mpls for Disney releases.
When there are several versions of a playlist, with only a few substituted segments it's generally the first one (or the one on the hundred) that's English.
If there are too many, that generally means there are fake playlists to inhibit ripping, but in this case it's just 800.
