Hi all-
I rip a DVD on a PC (much faster than using my Mac laptop) to MKV. All is well.
Bring ripped MKV over to MacBook Pro. Open with VLC, no subtitles. Have subtitles on PC.
What Voodoo is at work here? :>)

Are your settings the same between the PC and Mac? In particular, does the Mac have a preferred language selected? If you have advanced options turned on ("Expert mode"), compare the default selection strings.
If you have a preferred language set, MakeMKV will only save audio and subtitles for that language by default.
Also, are you trying to play both files with the same version of VLC?
