how to make sense of the clips
there are so many files once the DVD is open, how do I know what to select? It seems there are a ton of similar files each with 23-24 chapters. It's probably an easy answer, but this is the first time I've used such a program.

The answer is.... "It depends!"
Sometimes a movie DVD will have dozens of "titles" that are there to fool people ripping the disks. Pick the wrong title, and you will find scenes repeating, out of order, etc.
Other times, there will be titles that are different "angles", but are really the same movie, with some scenes changed, like a "director's cut" or a film that has English credits AND the original language credits as different "titles".
In both of these cases, you sometimes have to rip everything, and watch it to see which is "right".
TV series? Common options are individual episodes as separate files/titles, all episodes as one file/title, all episodes as one file/title with scenes lists to get the individual episodes, and even combinations.
Don't sweat it - have fun, play with the options, see what you get. It's not like doing it is going to scratch the disk (unless your drive is screwed up) to do multiple times with different rip options, as you try to "get it right".
