Trying to Configure Video & Audio Tracks

I have seen the following topic and its subsequent topics:

But try and I might, I just want MakeMKV to set english as the default audio track while English and one other language are included (but not on by default) as subtitle tracks with the same other language additionally included as an audiotrack.

Currently, I have had no luck with the forced tracks or understanding them despite the discussions provided. When MakeMKV uses them, it says it removed the forced ones and in the audio and subtitle track lists, two of both languages are provided - so what is going on and why are there TWO English audio and subtitle tracks and TWO audio and subtitle tracks of the other language I want?

My current attempt (OTHER being the other language in the template I'm using:

You'll need to provide details of the disc in question to get a definitive answer. However possible reasons for multiple audio/subtitle tracks for a specific language include:

• Different sound formats (e.g. Dolby TrueHD, Dolby Digital, Dolby Surround);
• Director's/actors' commentary tracks;
• Alernate soundtracks for discs supporting parental ratings (e.g. edited swearwords) or multiple angles;
• Audio description for hard-of-hearing.

Each soundtrack should be listed after MakeMKV has initially processed the disc and can be expanded to show more detailed information (bitrate, etc). This may also mention the soundtrack's purpose.
