Should I watch for updates even though I have a paid license?
Should I pay attention to updates to MKV? I paid for a license/registration and it seems like its just gonna work forever now. Will I get a notice of available updates?

Every time you start MakeMKV, by default, it will check for an update (this can be turned off). When I run v1.16.4, I'm constantly told that 1.18.3 has been made available, but I have had some issue with that for some old DVDs (tweakable, but I haven't done it yet).

No need. If that version of yours works fine, use that.
But if you want to upgrade and something is not working right, you can always downgrade to older working version and use same paid key.
