Ripping tv show seasons

How do you all store tv show seasons? I mean filenames as well as organizing them on disc? I add them to iTunes and they always show up listed out of order. Is there some way to get them to list in order?

Generally, I use "TV Series->[show name]->[season]->episode"

That changes for anime, as there is a LOT more of that on my servers. I separate them by Subtitled/Dubbed, first initial of the name, name, then episodes. Makes it easier to find things, when I can remember the title!
