Can someone please point me to "how do I tell MakeMKV to save each new disk in its own subdirectory?"
I don't know which words I have to look for,
and how do I prefer two languages as default (ger & eng) for sound and subtitles

MakeMKV preferences, Video. Default destination. Select "SemiAuto", and set the base directory for where you want things put. Apply and restart MakeMKV.
The default storage location should now include the disk name (which you can set if blank). Mine uses drive Z:, so if the disk name is "MHA WorldHeroesMission", the default for output folder is "Z:/MHA WorldHeroesMission".
