choosing subtitles for non-english parts of blu rays

Can someone explain to me which subtitles i should choose for my blu rays that have non-english parts spoken and require subtitles (that are not already burned into the films)

I end up with english subs throughout the whole film which i dont need!!

plus also can they be made into seperate srt file?, because i re-encode my rips down to 720p using handbrake

I believe that HB does not currently support PGS subs.

Also, I think you would only want the Forced Subs for what you want. You might need to check with each movie though.
