When I went to add Vesper to my NAS I received this message "This disc uses newer version of AACS protection. Please let us know about it by visiting...".
I was curious what this new protection is? I was still able to save my MKV.

Disks can have different encryption code when written. MakeMKV generally will remove that, if it knows what it is. It changes "often".

MakeMKV can do automatic lookups of the encryption data, if it has been encountered by someone contributing such code. It is not automatic; the "visit" link includes the information necessary to make the changes (normally!) to MakeMKV, and you're encouraged to click the link, but it is not automatic.

Once it has been added to the "system", it can be downloaded automatically IF YOU ALLOW IT. It's part of the start-up for MakeMKV, and you'll notice it when it says, "Downloading latest SDF to C:\MakeMKVSVQ ..." (or where ever you've set up your MakeMKV work directory). There may be a secondary download if you're getting the latest disk files, but it will be mentioned in the log if you are.
