I have tried multiple times now to rip episode 10 (file created FIREFLY_DISC_3_t00.mkv) of Firefly. It keeps on getting stuck with 34 seconds remaining. MakeMKV hangs for a long time before logging these errors and fails the write.

Most likely, your disc is bad. Get a replacement.

This is a disc mastering error. MakeMKV can work around these most of the time, but sometimes it fails. Please try processing the title again and send the full log (MakeMKV.log, as written by MakeMKV) to support@makemkv.com . The full log has all necessary debug info for workaround.
