I used the current version of MakeMKV on my Win7 Ultimate PC to rip a Blu-ray (SALT) DVD. It saved the 30+ files in DIVX format. Whenever I click on any of the files, Windows Explorer quits. I tried opening DivX, then opening the files and DivX quits.
Any clue how I can delete these files?

MakeMKV almost certainly didn't save anything in divx format.
I suspect you have .mkv file extension associated with the divx player, try viewing the files in VLC or MPC-HC instead. (I also have my suspicions that this is somehow related to explorer crashing. I can't be much more help, VLC and WinXP user.)
I can't answer regarding not deleting, but I have seen discussion here recently about an addition space added to the end of directory names that caused some problems.

I wound up deleting them by command line. Even safe mode didn't do it.

Scandisk should fix it.
Windows 7
Run cmd as Administrator
takeown /f file_name /d y
icacls file_name /grant administrators:F
and delete your file.
