Does the software not allow for DVDs to rip to AUDIOTS and VIDEOTS folders? I only get the option for a MKV file.

Correct, DVDs only to MKV files.
The "backup to folders" was introduced for Bluray because there was not an existing solution like that. DVDs are, for the most part, "well understood" by playback software, and most can play an encrypted DVD ISO without problem.
