How do I rip a movie that spans multiple DVDs (Lord of the Rings)?

I'm wondering if there is a way to rip a movie that is on multiple DVDs/BluRays. I've got a majority of my collection ripped, but I don't own video editing software that would allow me to stitch the movie together after ripping from both discs.

If your playback setup is Plex, you can play a movie split into multiple files. Like all things in Plex, you just have to name it correctly. I presume, but don't actually know, that other Plex-like things, like Jellyfin and Emby can do a similar thing.
