Newbie Confused about Subtitles

When I use Make MKV to rip a DVD, I tell the program to not include subtitles. However, there are some movies, like Bulletin Train, that have the subtitles as part of the movie, or at least I thought they were, but of course, when it comes to the part where Chinese is being spoken, there are no on-screen translations. I am not sure what I need to do to keep those subtitles but not have English subtitles throughout the entire movie. I use Hand Brake to so I am not sure if that is where my problem exists. I saw this in The Martian. On Netflix, when the Japanese space department heads were speaking you could see the translation to English but when I ripped the DVD, they are not there. So...when using MKV do I need to enable subtitles and for my purposes, what would I want Hand Brake set to. Again, I do not want to see English subtitles throughout the entire movie.
