I just updated my MacBook Pro to Monterey 12.01.1 earlier today. When I opened up Make MKV this evening, an alert came up that says "Fatal error occurred, program will now exit." I'm assuming this means that the version of MakeMKV Beta I'm currently using (1.16.3) isn't compatible with Monterey. Is there another version of the program that I could download instead? Or is this potentially an issue that we expect to see resolved shortly?

Have you tried the current version, 1.16.5?

Version 1.16.4 was where Monterey support was added. As Woodstock said, 1.16.5 is current.

Thanks for the tip, I've installed the new version and everything appears to be working properly again.

1.16.5 didn't solve this for me. Running Monterey 12.1 on M1 macbook pro. I get the fatal error message too. I removed makemkv completely using appcleaner and reinstalled but no luck. Log results here:

I'm pretty sure that message means MakeMKV can't contact the server to download keys. The post linked below will show you have to figure that out.
