Back Up A DVD?

I'm guessing the you can only "Back Up" a Blu-ray, and not a DVD. Is this correct?
I'm not talking about creating a .mkv file, I'm talking about using the "back Up" button.

Correct - the Backup function is Bluray only.
There are other utilities out there that will produce DVD ISO files that are decrypted, and many players don't even need it to be decrypted.

Thank you! Any suggestion on a Mac app that would allow me to mux a subtitles file into a format that could be burned back to DVD with soft subs and no loss in quality? I have Toast for the burning, would tsMuxeR do the trick? It works for Blu-rays.

I can't make recommendations on that - my access to Macs is limited, and I haven't seen the need to re-author DVDs yet.
I do know that your run-of-the-mill DVD player isn't smart enough to deal with text-based subtitles, and those that are can probably play MP4 files directly. Modern Bluray players are more likely to be media players with a BD drive in them, so you can really just make a data DVD (or BD) with the video.
