Sorry I'm not clued up on how to change the read speed of my Asus bw-161ht drive.
I've read the post regarding changing the speed drive. Do I just put 0 so that the drive doesn't have any limits?
At the minute it's taking 5 hrs to do a uhd disk. Before update it was 1 hr.

What was updated that caused the time it takes to rip a disc to change?

Yes. Apparently there is speed control with the updated Make mkv software. My read speed is getting to 2.6x around 10mbs.
Someone posted a way of changing the speed settings but I'm struggling as to what to enter. Thanks

Example speed strings:
"0=99" - Enable unlimited speed for all media.

Examples for different media types were all listed in the tutorial. IF you have issues w/ a certain media type, you can slow it down as an experiment. It's 'user's choice'. My example is just the all-inclusive, full speed case.

Realistically what read speeds should I be getting when reading copying uhd discs?

Spec says 16x, but this is the real world & it can vary by disc. IF MakeMKV is having no issues reading the disc, speed will slowly ramp up to something approaching maximum. Cleaning a disc, even if it looks pristine to the naked eye, might help.

The desktop drives can max out at about 8x without the speed unlock but most of the time will be at 5-6x with he speed unlock you can go up to 12x
