I'm new to all this, so apologize in advance.

Today I installed Make MKV and ripped my copy of Star Wars The Force Awakens, only to find out that it ripped in HDR. I have an HDR monitor capable of displaying it, but I was wondering if it would be possible to rip it into SDR instead of HDR?

MakeMKV just copies what's the on the disc into a .mkv file and doesn't change it.

You can use something like Handbrake to create a version of the file that has been tone mapped from the 4K UHD colorspace (bt.2020) to the normal blu-ray colorspace (bt.709), aka from HDR to SDR.
