I would like to start a UHD, from which I have made a backup, with VLC by going to “Media => on the folder and starting the movie.
Unfortunately, I have to go to the AACS directory and start the first stream so that I can watch it.
Is there a better solution?

If you still have the AACS directory, then it is an encrypted backup I assume?
Anyway, when I want to play a BluRay/UHD backup with VLC, I press Ctrl+D for the Open Device window, go to Disc, select BluRay and the browse to the folder, where the BDMV directory is inside (aka what would be the root directory of a BluRay/UHD). Then everything just plays.
Beware, that you need a Java 8 for quite some menus on your system, and a set JAVA_HOME variable for VLC to find it.
