How does makemkvcon select audio tracks, and subtitle tracks. Mainly I just want to pull everything into the mkv.

Using default profile. You can either change default selection in preferences, or pass your own profile to makemkvcon.

makemkvcon: does it select all subtitles, audio tracks?
