Primer for Conversion Profiles?

As one of the guys interested in setting Subtitles OFF by default, I've got a LOT to learn about xml config files in general and Conversion Profiles specifically. I've perused the FAQS to no avail, can you suggest where I could get a primer on the topic? (I'm a quick study, but could use a bit of "documentation.") Thanks for the GREAT software!
