Explanation of Profiles

I was wondering about the different profile options. I read the sticky, but I still have some questions about the different profile options. Do the profiles just control things like which tracks are selected and what format to put the audio in? What exactly does the default profile entail? Does the default profile provide a direct copy of the specified tracks?
