retain only English audio subtitles and convert DTS to AC3

I would like to retain only the English audio and subtitle(s).
I would like to convert the English DTS track to ac3 and keep only the converted English ac3 audio track with the English subtitle track(s).

What preference settings or XML file would achieve this?
