Opening Bluerays Manually like DVD

So I would like to rip a copy of this TV show to put on my plex server. but I have this problem.... the makers of the disc decided to make the blueray one massive file with the episodes separated by chapters.... I used to solve this with DVDs by opening the disc manually but the option appears to not be there for bluerays.... may I ask why its not an option and request that the function be added?

You can use MKVToolNix to split the MKV file created from MakeMKV to make a new file after every chapter:

The original file will be just cut into pieces, no reencode is done there.
