It's probably displaying the bit rate including the container overheads, which may include unused audio tracks, etc.
The entire ethos of MakeMKV is to preserve the tracks without and losses incurred at all. That's also one of the reasons it is so fast compared to something like Handbrake, which takes massive processing power to re-encode the tracks to a lower bit rate.
