How do I edit MKV files to remove certain audio tracks (French, Spanish, ect)?

mkvmerge, which is part of MKVtoolnix is the easiest way.

Load in the MKV file, uncheck the streams you don't want and then hit remux.

Ouch! I hope "mike admin" has a thick skin (Just kidding).

You can accomplish this just as easily and simply using MAKEMKV (and the IDENTICAL instructions stated by "paulster" for use with "mkvmerge")

Often you'll have to do this anyway when there are multiple versions of subs in each language and you can't distinguish them before ripping, so it's worth knowing how to do it.

But, yes, if you just want English to be ripped then simply deselect the other tracks in MakeMKV.
